We're not a dealership and we're not a body shop. We're fabricators — welders, electricians, and cabinet makers who specialize in turning steel and aluminum into fully operational mobile kitchens.

Since 2014, Gilroy Food Trucks Manufacturers has been equipping entrepreneurs, restaurant groups, and beverage brands with custom-built mobile units across California and beyond. Every truck leaves our shop at 6450 Automall Parkway meeting local health, fire, and DOT standards.

We meet at our Gilroy shop. You share your concept — menu, style, budget, target events. We listen, ask questions, and sketch initial ideas.

Design & Engineering

Our team produces detailed floor plans, electrical schematics, and material selections. You approve every detail before we cut metal.

Fabrication

Welding, framing, insulation, plumbing, and electrical rough-in. Then millwork, countertops, equipment install, and finishing touches.

Inspection & Delivery

Final walkthrough, systems testing, and compliance verification. We hand you the keys — and the paperwork — and you're ready to serve.
